Breakfast is undeniably the most important meal of the day. However, it often takes a backseat to quick coffee runs or fast-food stops. With this make-ahead breakfast casserole, you’ll appreciate breakfast like never before. You might even find yourself making enough to enjoy for dinner! After all, breakfast meals are often more satisfying the next day, right?
This simple breakfast dish is easy to prepare and highly customizable. Don’t fancy bacon? Feel free to swap it for sausage. Prefer a different cheese? Go ahead and make it your own!
Ingredients:
- 2 small russet potatoes, diced
- 4-5 large eggs
- 1/4 cup milk
- 1 teaspoon hot sauce (optional)
- Freshly ground black pepper and kosher salt, to taste
- 1 tablespoon olive oil
- 3 Italian sausage links, casing removed
- 1 diced red bell pepper
- 1 diced green bell pepper
- 1 cup shredded sharp cheddar cheese, divided
- 2 tablespoons fresh parsley, chopped
Instructions:
- Preheat your oven to 350°F (175°C) and lightly coat a 9-inch baking dish with nonstick spray.
- In a microwave-safe bowl, combine the diced potatoes and 1/4 cup of water. Cover and microwave for 4-5 minutes until tender. Drain and set aside.
- In a large measuring cup, whisk together the milk, hot sauce, and eggs. Season with salt and pepper, then set aside.
- Heat olive oil in a large pan over medium heat. Add the sausage and cook until browned, about 3-5 minutes, crumbling as it cooks. Drain excess grease.
- Add the bell peppers and potatoes to the pan, cooking for another 3-4 minutes until everything is tender.
- Remove from heat and stir in 1/2 cup of cheddar cheese until well combined.
- Evenly distribute the sausage mixture in the prepared baking dish. Pour the egg mixture on top, then sprinkle with the remaining 1/2 cup of cheese.
- Bake in the preheated oven for about 40 minutes, or until the eggs are set.
- Serve immediately, garnished with fresh parsley if desired.
