Baked Salmon: The Recipe

Ingredients:
- 2 lbs boneless salmon (at room temperature)
- 2 small lemons, divided
- 5 sprigs of fresh rosemary
- 1 tsp kosher salt
- 2 tbsp extra virgin olive oil
- 4 cloves garlic, chopped
- ¼ tsp ground black pepper
- Chopped fresh herbs: basil, dill, parsley, thyme, or green onion (optional)
Instructions:
- Preheat your oven to 370°F and line a baking dish with aluminum foil.
- Coat the foil with cooking spray and place 2 sprigs of rosemary in the center of the dish.
- Thinly slice the lemon and arrange the slices on top of the rosemary. Place the salmon on top and drizzle with olive oil.
- Season with salt, pepper, and garlic. Place the remaining lemon slices and rosemary over the salmon.
- Juice one lemon and pour the juice over the salmon.
- Fold the foil around the salmon, leaving a bit of space for air circulation.
- Bake for 15-20 minutes, depending on the thickness of the salmon.
- Once done, carefully open the foil and change the oven setting to broil. Return the fish to the oven and cook for an additional 3 minutes, or until the top is slightly golden.
- Cut the salmon into slices and sprinkle with additional fresh herbs before serving!
